Yogurt Spot will probably be my first stop when I get back into Austin next week, a week after the Paleo Challenge ends. But until then, and even after, I think, I have found a wonderful substitute. Eric once made coconut milk ice cream, but I’ve heard many people talk about a banana-soft-serve-style frozen treat, so I made it the other night:

IF you like bananas, I would DARE say this is AS GOOD as frozen yogurt. But you must like bananas.

Because how you make this? Freeze a banana. Blend it up. Eat.

I added a little coconut milk, which made it easier for the sad, small food processor that is my single-serving gadget to whirl. It also added some creaminess, which I liked. But it was just a little bit–probably about 2 tbsp.

I added cacao powder and almond butter, so it tasted like a delicious chocolate-banana-almond butter bowl of soft serve ice cream, but there’s no disguising the banana flavor. After all, it IS A BANANA.

Pro tip: Peel the banana and break it into a few pieces before freezing in a freezer bag. Peeling a frozen banana? Impossible.
