		<description>One hint... Wait to add your garlic until the onion has started to become translucent! The EVOO/onion/garlic combo is a righteous start to quite a lot of Italian cooking - it&#039;s called a soffritto. Some cooks choose to throw them both in at once, but as you note - it&#039;s easy to burn the garlic (and burned garlic sucks azz... and flavors everything like, well.... burned garlic). Waiting to add the delicate stuff does not seem to affect the flavor at all - it just lets you proceed with the dish when both the onion and the garlic have reached the right level of doneness....

Sounds like a great recipe... I&#039;m going to dial up spaghetti squash the next time I make the family red sauce (handed down for many years directly from it&#039;s Sicilian origins...)!!</description>
