I found that simply substituting almond meal for crushed crackers in my family meatloaf recipe worked just fine.  You always need two binders in any meatloaf or crab/salmon cake recipe...I usually opt for eggs and almond meal.  I need to play around a little more ans see if I can find something better.

Why not just try altering your favorite meatloaf recipe (if you have one that is).  Lyssa and I find that we prefer altering &#039;regular&#039; recipes than going with pre-made Paleo ones. Consider it an experiment and have fun!

Here&#039;s an IMPT tip that paleoplan.com doesn&#039;t mention:  You want to put a wire rack in the baking sheet, and place your meatloaf on that so that it will drain while it cooks.  If you don&#039;t do this, you will likely have one soggy meatloaf.

It also makes for a better tasting meatloaf to use a mixture of meats rather than just one. Hmmm...by the looks of this post, I think I need to devote a post to the making of meatloaf!
