Recipe: Apple Cinnamon Mini Muffins

I am super proud of myself right now. I’ve spent the afternoon cooking foods for the week, and decided to experiment with an apple cinnamon muffin recipe. Since I made this decision after my big trip to the grocery store (where I ran into Adrien Brody!), I had to make due with the ingredients I had on hand. I took some ideas from different published recipes, but this was largely my own paleo baking experiment- and it turned out really well!

Ingredients:

  • 1/2 cup coconut flour
  • 3/4 tsp baking soda
  • 1/4 tsp celtic sea salt
  • 1 tsp (heaping) cinnamon
  • 3/4 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/3 cup coconut oil, melted to liquid
  • 1 apple, grated (with skin)- about 3/4 cup
  • 1 applesauce cup (the snack size cup)
  • 1 date, grated (or pureed…my food processor just doesn’t quite do the trick, so I hand grated)
  • 3 eggs, lightly beaten

Combine all dry ingredients.

In a separate bowl, combine date, applesauce, and liquid coconut oil. Slowly add dry ingredients, using a whisk to mix thoroughly.

Add eggs, whisk thoroughly.

Mix in grated apples.

Pour into muffin cups or greased muffin pan. You could make regular size muffins. I like mini muffins because they are cute and bite sized!

I sprinkled my muffins with some extra cinnamon before baking. I think some crushed pecans on top would also be really good.

Bake at 350 degrees for 17 minutes. This recipe yielded 24 mini muffins.
