Deli Meat Ceviche

One of my friends was recently asking me about choices for mid-morning or late afternoon snacks. Instead of reaching for that Snickers candy Bar (or in my case a Cliff Builder Bar), I suggested Deli meat. Her response was one I commonly hear – “I don’t like to eat deli meat by itself unless it is in a sandwich”.

Well here’s a quick alternative I’ve come up with.

Deli Meat Ceviche

Time - 10 mins

Ingredients

Cut up a couple of slices of your favorite Deli meat

  • My favorite is Boar’s Head Blazing Buffalo Deli Chicken
  • Make sure you check the Deli meat you are buying for the ingredient list. A lot of them are loaded with fillers, gluten and artificial colors

1/4 Avacado diced
1/4 Bellpepper diced
1/4 Raw Mango diced
1/4 Onion diced

Crushed Walnuts or Pecans or Almonds

Crushed Pepper
1 Lime

Mix the ingredients including crushed nuts, then add lime and crushed pepper as needed. Add a glass of cold Perrier Sparkling water to complete a quick healthy snack for the mid morning or late afternoon.

  4. Lyssa – I tend to get bored eating the same thing over and over – this recipe allows me to switch out different deli meats, boiled eggs. veges, fruits, berries & nuts

    Suba – IMHO if you do this with plain paneer or tofu, it will be really bland. My suggestion would be to marinate (I can send you the ingredients for the marinade I use) the tofu/paneer and then bake/grill it. If you make a batch over the weekend, you can sub it out with different combination of fruits/veges during the week.

    Shredded carrots
    Berries
    Mandarin Oranges/Green Apples
    Cucumber
    Beets

  5. To prove Arun’s point about the flexibility of this recipe, I present you with my lunch today-

    I replaced the mango with pear, and I used olive oil and and indian seasoning blend from central market in place of lime and pepper. Delicious! Even all the people eating sandwiches and pizza around me said that my lunch looked great.
